What is your signature dish?

My signature dish would have to be one I have here on the La Forêt Menu. It is definitely one of the more experimental dishes I have ever crafted, the Rabbit Vadouvan. I feel this dish truly embodies what we intended to do here at La Forêt. Combining French culture with the wild and rustic elements of the forest.

Rabbit Vadouvan (pictured): Bone-in Rabbit leg – sous vide then grilled; served with Vadouvan sauce (french curry) and finished with clarified butter, charred peppers and foraged mushrooms.
