Where do you draw inspiration from?

Throughout my career working at various Michelin restaurants, I have had the opportunity to evolve and adapt through awareness and embrace alternative evolutions of cuisine, ingredients, and simply the temptation and desire to share them with guests and my team at 801 Fish. To me, there is not just one true entity or interpretation of inspiration. The embodiment can find form from art, innovation, nostalgia, desire, and even the lack thereof. I consistently allow myself to have the pursuit of connection and respect towards the bright minds within the company and industry.

On your night off, what do you eat and where?

For much of my life I have traveled around the world and constantly sought out the refinement of restaurants within various regions to expand my palette and engineer personal depth. Being new to the Denver area has been a great opportunity to immerse in a new variety of restaurants and hospitality. I enjoy sharing these moments with family, friends, and my significant other. I recently had dinner at Koko Ni. The Japanese and French inspired tasting menu and service were uncanny and delightful. I am certainly looking forward to future experiences within the city.
